I am all for quick and easy recipes.
Don’t get me wrong—I love cooking, but easy recipes are especially helpful when you live a busy life. Rushing kids around to activities, working a busy job/business, all of the things. So, having access to those easy recipes you can just whip up on the fly and let cook on their own is a must.
Soup is an easy go-to. You can make big batches and freeze it (unintentional – or maybe intentional – meal planning), play around and add whatever you want, and it’s a great way to clear out food that is getting bad.
Check out my favourite easy Spring Minestrone soup recipe to hit the spot when it’s still winter (is it ever going to end), but you just want it to be spring.
Easy Recipe:
- An assortment of veggies, lots – Add as much as you like and whichever ones you have and/or like (I used celery, green pepper, green onion and garlic)
- Carrots
- Potatoes
- Broth (I used homemade bone broth from bones we’d collected and kept in the freezer)
- Navy beans
- Tomatoes
- Parmesan rind
- Optional: Pasta of choice
Instructions:
- Chop up all your veggies
- Sauté all veggies in a pot except the potatoes, carrots and tomatoes until they’re perfectly browned
- Add the potatoes and carrots and let them sauté for a bit
- Add your broth so it covers all the veggies
- Add your pre-soaked navy beans, tomatoes and the Parmesan rind and let it simmer for a while
- While that simmers, I will cook up a bit of pasta to serve with the soup
- Test to make sure everything is cooked and it’s hot
- Enjoy!
Don’t make every meal complicated. Keeping things simple with easy recipes can save you time, ensure your meals are enjoyed, and load you and your family with healthy nutrients.
