This melt-in-your-mouth pork shoulder roast is my go-to for an effortless, nutrient-packed meal that practically cooks itself and is perfect for these crisp autumn vibes.

Slow cooked meals in autumn are just next level. First, they provide all of the cozy (and honestly, they’re so easy because you just leave them for a long time). 

 

But they also:

  • Retain Nutrients: Slow cooking preserves more nutrients compared to high-heat methods.
  • Enhance Flavour: Cooking over low heat allows flavours to fully develop.
  • Tenderize Meat: It breaks down tough cuts of meat, making them tender and juicy.
  • Are Convenient and Time-Saving: Set it and forget it—great for busy schedules.
  • Create Healthier Meals: Less need for added fats or oils due to the slow cooking process.

 

Ingredients:

  • 1 pork shoulder (around 3-4 lbs)
    • 4 cloves garlic, minced
    • 2 tbsp fresh thyme, chopped
    • 2 tbsp fresh sage, chopped
    • 1 tbsp fresh oregano, chopped
    • 2 tbsp olive oil
    • Salt and pepper, to taste
    • 1 cup bone broth or vegetable stock (optional, for roasting)
  • Chimichurri 
    • 1 bunch fresh parsley, chopped (about 1 cup)
    • 2 tbsp fresh oregano, chopped
    • 2 tbsp fresh basil, chopped
    • 2 cloves garlic, minced
    • Zest and juice of 1 lemon
    • ¼ cup red wine vinegar
    • ½ cup olive oil
    • Salt and pepper, to taste

 

Instructions:

  1. Prepare the Pork:
  • Preheat your oven to 275°F (135°C).
  • In a small bowl, mix the minced garlic, thyme, sage, oregano, olive oil, salt, and pepper into a paste.
  • Rub the pork shoulder all over with the herb-garlic mixture, massaging it into the meat.
  • Place the pork in a roasting pan or Dutch oven. If you want extra moisture, pour about 1 cup of broth into the bottom of the pan.
  • Cover if desires and roast for 4-5 hours or until the meat is very tender and pulls apart easily with a fork.
  1. Make the Herb Chimichurri:
  • While the pork is roasting, prepare the chimichurri sauce.
  • In a small bowl, combine the chopped parsley, oregano, basil, garlic, lemon zest, lemon juice and red wine vinegar.
  • Slowly whisk in the olive oil until the mixture is well blended. Season with salt and pepper to taste. Set aside to let the flavors meld.

To Finish:

  • Once the pork is ready, drizzle the chimichurri sauce over the pork and serve with your desired side.
