Happy Autumn and happy squash season!

My favourite season is squash season and squash are amazing autumn and winter foods.

One of my favourite squash types is spaghetti squash. It’s robust, it soaks in flavour and it fills you right up.

When I got married in 2021 we received an amazing Ninja Air Fryer as one of our gifts and it is my favourite appliance in my kitchen. I try to air fry everything and spaghetti squash is one thing that works well.

This is an incredibly simple recipe. It doesn’t take long to prepare and the air fryer does most of the work.

Recipe:

  • 1 spaghetti squash
  • Avocado Oil – amount will be dependent on the size of your squash
  • Spices: Himalayan salt, pepper, nutmeg, cinnamon, thyme, rosemary and paprika

 

Instructions:

  1. Slice squash ends off & then in half lengthwise & scoop out the insides
  2. Set the air fryer to 425 for 20 minutes (you may have to play around with the settings of your fryer as they are often different)
  3. Poke holes in the squash & coat the squash with butter & spices
  4. Put in the air fryer & at the 10-minute mark check & poke more holes
  5. Once done, scrape into noodles or mush (I like mush)
  6. Add a little bit more butter, nutmeg & cinnamon (add some vegan cheese or regular cheese if you like)
  7. Enjoy

Enjoy this with a protein and a veggie as well!
